Steak Doneness Temperatures: A Clear Chart

The short answer: use temperature, not the colour name
A steak doneness chart is useful only if it separates preference from safety. For whole beef steaks, USDA's home-cooking minimum is 145°F (62.8°C), followed by at least a 3-minute rest. Ground beef must reach 160°F (71.1°C). Culinary labels such as rare, medium-rare, and medium are not standardized temperature grades, so decide on a final number, measure the thickest centre, and treat colour as a description rather than proof.
That last point matters because familiar charts disagree. Certified Angus Beef labels 135°F medium-rare and 145°F medium, while the Beef Checkoff's restaurant colour guide places medium-rare at approximately 145°F and medium at approximately 160°F. Both are real published charts. They simply demonstrate why “medium-rare” is not a precise instruction.
This guide uses the USDA safe minimum of 145°F with a 3-minute rest for beef steaks as its floor. It then shows how to plan higher final temperatures and account for the temperature rise after the steak leaves the heat.

Here is the working chart for a home kitchen. “Final target” means the lowest reading you want the steak to reach. “Planned pull point” is where you might remove it if your own notes show a reliable 5°F rise during the rest. If you have not measured that rise on your equipment, cook to the final target before removing the steak.

Certified Angus Beef's current steak chart says to remove a steak 5°F below the desired doneness because its temperature continues to rise while resting. That is a useful planning allowance, but it is not a promise that every steak rises exactly 5°F. Thickness, heat intensity, cookware, bone, and the time spent near the heat all change the result.
There is one hard boundary in this chart: the planned pull point never falls below 145°F. USDA says the whole steak should reach its minimum before it is removed from the heat source, then receive the rest. A higher sensory target can make use of carryover; the federal minimum cannot be borrowed from a hoped-for rise.
Why medium-rare can mean two different numbers
The Certified Angus Beef doneness chart calls 125°F rare, 135°F medium-rare, 145°F medium, 150°F medium-well, and 160°F well done. The Beef Checkoff steak colour guide uses approximately 140°F for rare, 145°F for medium-rare, 160°F for medium, 170°F for well done, and 180°F for very well done.
Those values are culinary descriptions, not competing government safety standards. Temperatures below 145°F do not meet the USDA endpoint used in this publication. Anyone choosing an undercooked steak should understand that distinction, and people at higher risk of serious foodborne illness should follow current government and clinician guidance.
The practical fix is simple: when someone asks for medium-rare, ask for the number they mean. At home, record the final measured temperature that produced the texture you wanted. Next time, repeat the number rather than relying on a colour word.
What temperature should you pull a steak?
Pull at 145°F when 145°F is your target. If your target is higher and previous cooks on the same method showed a dependable 5°F rise, pull 5°F below that higher target, but never below 145°F. Then leave the thermometer in place or recheck during the rest. If the steak does not reach the intended higher target, return it to the heat.
Here is the arithmetic. Suppose your last three 1½-inch strip steaks left the skillet at 155°F and peaked at 160°F. The observed rise was 160 - 155 = 5°F. For another steak of similar cut and thickness cooked by the same method, 155°F is a reasonable planned pull point for a 160°F finish. It is a starting hypothesis, not a guarantee.
Now change the method and the old number may no longer transfer. A steak that leaves a fierce grill has a different temperature gradient from one warmed gently in a low oven. A 2-inch ribeye stores and redistributes heat differently from a ½-inch skirt steak. Keep the final target fixed and relearn the rise when the cut, thickness, or method changes.
What is carryover cooking?
Carryover cooking is the continued movement of heat toward the cooler centre after food leaves the heat source. The surface and outer layers are hotter than the middle. During the rest, that stored heat moves inward while heat also escapes to the room.
USDA describes rest time as the period after meat leaves the oven, grill, or other heat source when its temperature remains constant or continues to rise. The agency's explanation is about pathogen reduction at its validated time-and-temperature endpoint, not a promise about the exact rise of every steak.
A thick steak exposed to hard heat often has more potential carryover than a thin steak or a steak brought up slowly. Tight foil can also retain more heat, although it softens the crust. That is why a universal instruction to “pull 10 degrees early” is unreliable. Measure what your steak actually does.
Where should the thermometer go?
For a steak at least about ½ inch thick, insert an instant-read probe horizontally from the side so the sensing area reaches the thickest centre. Keep it away from bone, large seams of fat, and gristle. USDA's food thermometer guidance gives the same placement rule and says thin foods should be checked from the side.
The probe's sensing area is not always the very tip. Read the manufacturer's instructions so you know how far it must enter. With a thick steak, check two or three nearby spots. An irregular ribeye can have a hot thin edge and a cooler central eye; one convenient reading does not map the whole cut.
For a bone-in steak, approach from the side and aim for the thickest edible centre without touching bone. For a very thin steak, take it off the heat briefly, slide the probe in from the side, and let the sensor settle. Do not hold your hand over a live flame or hot skillet while trying to find the centre.
Clean the probe with hot, soapy water according to its instructions after it touches raw or partially cooked meat. Do not place a used probe on a clean serving board.
Why colour and touch cannot certify doneness
Brown does not prove safe and pink does not prove unsafe. The Beef Checkoff's review of colour changes in cooked beef describes premature browning, persistent pink, and colour reversion. Meat chemistry, pH, packaging, cooking conditions, and pigments can all change how a cooked steak looks.
The finger test has the same basic weakness: it measures a cook's impression of firmness, not internal temperature. Cut, marbling, thickness, ageing, and muscle structure all affect resistance. Use touch to learn texture after the thermometer has established the number, not as a substitute for it.
Juices are not a thermometer either. Their colour can change while the coldest part of the steak remains below the target. A clean instant-read thermometer gives a number you can repeat and audit.
How cooking method changes the pull decision
Direct grill or skillet: Check earlier than you think necessary because the exterior is receiving intense heat. Turn as needed for even cooking, then measure from the side. If the steak is thick and your target is above 145°F, a recorded carryover allowance can prevent overshooting.
Sear, then oven: The oven moderates the finish, but a hot pan and hot cookware still contribute stored heat. Move the steak off the hot pan before resting so the pan does not continue cooking one face.
Reverse sear: A low oven brings the centre close to its planned endpoint, then a brief hot sear builds the crust. Our thermometer-first reverse-sear method uses a 250°F oven and continues through the sear until the steak reaches at least 145°F. The sear is part of the cook, not decoration after the temperature decision.
Broiler: The distance from the element and the pan's heat can produce a sharp gradient. Pull the pan out to check rather than reaching under an active element. Follow the appliance instructions and keep the broiler attended.
Very thin steak: There may be too little time and thickness for a useful pull-then-rest calculation. Cook over controlled high heat, turn, check from the side, and stop when the centre reaches the chosen safe target.
Whole steak is not the same as ground or tenderized beef
The 145°F plus 3-minute standard applies to beef steaks, chops, and roasts. USDA lists 160°F for ground meats. Grinding distributes surface contamination through the product, so a burger does not inherit the steak rule.
Read the package on steak as well. Mechanically tenderized, injected, cubed, pounded, formed, or otherwise non-intact products need the label's cooking instructions. The FDA's intact-steak materials explain that processes which break the exterior can move contamination into the interior. Do not assume a blade-tenderized supermarket steak behaves like an intact whole-muscle cut.
Keep raw beef and its juices separate from cooked food, salad, sauce, clean utensils, and the serving board. Use a fresh plate after cooking. Wash hands and food-contact surfaces. The temperature chart handles only the cooking endpoint; it does not correct cross-contamination.
Build a pull-temperature record in three cooks
You need four entries, not a special app:
- Write down the cut and thickness at the thickest point.
- Record the cooking method and relevant heat setting.
- Record the temperature when the steak leaves the heat.
- Measure the highest temperature during the rest and subtract the pull reading.
If a steak left at 150°F and peaked at 154°F, the rise was 4°F. If the next left at 151°F and peaked at 155°F, that was another 4°F. A similar third result gives you a useful house estimate for that cut and method. A different pan, grill, thickness, or resting setup starts a new line in the notebook.
This small record is more useful than a universal minute-per-side chart. Time still helps with dinner planning, but the thermometer decides when the steak is done.
Rest without losing track of the target
Place the steak on a clean board or warm plate. Rest at least 3 minutes after it has reached 145°F. For a higher desired endpoint, recheck during the rest until the temperature peaks. A loose foil tent is optional in a cold room; tight wrapping holds steam against the crust.
Do not slice immediately to inspect the colour. Cutting opens the centre, releases moisture, and still gives no reliable safety measurement. Serve sauce alongside rather than using it to hide an overcooked or underchecked centre. A measured steak and a spoonful of chimichurri need very little negotiation at the table.
The repeatable decision
Choose a final number first. Treat 145°F with a 3-minute rest as the minimum for a whole beef steak under USDA home guidance, and 160°F as the minimum for ground beef. If you want a higher final temperature, subtract only the carryover rise you have actually observed, never dropping the pull point below 145°F.
Probe from the side into the thickest centre, away from bone and fat. Check more than one place on an irregular cut. Record pull and peak temperatures. After two or three cooks, your own pan, grill, and preferred steak thickness will give you a better pull target than a colour label ever could.
